Here’s a side dish that takes only minutes of preparation time, but is impressive enough to serve to guests or on holidays. Brussels sprouts have become popular side dishes for the holidays, at restaurants, and for everyday meals at home. This recipe brings out the best of brussels sprouts by roasting them with a simple mixture of olive oil and garlic, and serving them with a tangy, creamy, and low-fat Dijon mustard sauce.

Brussels sprouts are some of nature’s prettiest vegetables, appearing like mini cauliflowers. They’re also some of nature’s most nutritious vegetables with a cup containing 3 grams of fiber, a day’s worth of vitamin C, and 10% of the daily value for potassium, and only 40 calories. Many recipes include butter, bacon, or maple syrup, but this recipe will prove that there’s no need to douse brussels sprouts in sugar and saturated fat for them to be delicious!

Use fresh whole brussels sprouts, cut in half, or purchase shaved brussels sprouts. You can also use frozen brussels sprouts; just thaw them and cut them in half before tossing them with the olive oil.

Tips and Variations

  • Serve these brussels sprouts as a side dish.
  • For a main course, add 12-16 ounces of leftover cooked fish, skinless chicken, or shrimp before baking them. 
  • Use leftovers in a salad or tossed in eggs for breakfast. 
  • Try it with cauliflower or broccoli florets instead of brussels sprouts. Green beans or turnips are another option.
  • Garlic lovers can add several cloves of whole garlic to roast in the pan with the brussels sprouts.
  • For a dairy-free version, omit the Greek yogurt. Blend ¼ cup of mashed avocado into the mustard sauce.

Recipe for Garlic Roasted Brussels Sprouts with Mustard Sauce

Makes 4 servings

Ingredients: 

  • 1 lb of brussels sprouts, in halves
  • 2 cloves of garlic, peeled and minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 2 tablespoons of plain Greek yogurt
  • 1 tablespoon of dijon mustard
  • 1 tablespoon of white wine vinegar or balsamic vinegar
  • 2 teaspoons of sugar
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. In a medium bowl, toss the brussels sprouts with the olive oil, salt and pepper, and garlic. Spread on a baking sheet and roast for 20-25 minutes or until done. Stir 1-2 times during the cooking time.
  3. While the brussels sprouts are roasting, add the yogurt, mustard, sugar, vinegar, and salt and pepper. Whisk to combine.
  4. Drizzle the mustard sauce over the brussels sprouts before serving.
