Recipe for Garlic Roasted Brussels Sprouts with Mustard Sauce
Makes 4 servings
Ingredients:
- 1 lb of brussels sprouts, in halves
- 2 cloves of garlic, peeled and minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 2 tablespoons of plain Greek yogurt
- 1 tablespoon of dijon mustard
- 1 tablespoon of white wine vinegar or balsamic vinegar
- 2 teaspoons of sugar
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- In a medium bowl, toss the brussels sprouts with the olive oil, salt and pepper, and garlic. Spread on a baking sheet and roast for 20-25 minutes or until done. Stir 1-2 times during the cooking time.
- While the brussels sprouts are roasting, add the yogurt, mustard, sugar, vinegar, and salt and pepper. Whisk to combine.
