Halloween can be fun and healthy for everyone! These bell pepper Jack-o-lanterns are as festive as can be, but they’re also high in nutrients. A green bell pepper has well over 100% of the daily value for vitamin C, an important antioxidant.
Carve your peppers
First, carve each of the bell peppers that you want to serve. Orange bell peppers may be closest in color to pumpkins for jack-o-lanterns, but red, green, and yellow peppers make beautiful edible decorations, too.
Start by carving out faces like you do with a pumpkin. You can make eyes, noses, mouths, and anything else your imagination wants.
Next, carefully cut off the tops of the bell peppers so you can stuff them, making sure you’ll be able to put the tops back on to cover them.
Make your fillings
You can mix and match different colors of bell peppers with different colors of fillings. Here are a few ideas.
- Red (whole-wheat pasta with marinara sauce)
- Purple (red cabbage cooked with apple and caraway seeds)
- Green (pesto pureed with cooked broccoli)
- Orange (pureed cooked acorn or butternut squash plain or mixed with seasonings)
You can be creative with your fillings. Just make sure they’re thick enough so they don’t spill out through the peppers’ eye, nose, and mouth holes when you stuff the peppers.
Your pepper jack-o-lanterns are ready to serve!
