Beets are among the healthiest foods on the planet, with a unique nutritional profile. How can you take advantage of them without opting for sugar-sweetened pickled beets or worse, red velvet cake with a minimum of beet juice compared to white flour, sugar, and butter? 

Try this beet pizza on whole-grain English muffin halves! It’s flavorful, satisfying, and simple. You can make it in the toaster oven. Just add sauce, sliced beetroot, other vegetables, and your choice of goat cheese or another cheese. Bake or toast your pizzas and enjoy!

If you don’t have whole-grain English muffins, use whole-grain sliced bread, whole-wheat mini pitas, or whole-wheat bagel halves (1 bagel half per serving). You can use any combination of vegetable toppings that you like, such as chopped tomatoes or roasted eggplant. 

For a low-carb version, try using cauliflower pizza crust or portobello mushroom caps instead of English muffin halves. 

You can roast, saute, or steam the beets before using them on the pizza if you prefer them to be more well-cooked when you eat them. You can also use golden beets if you prefer. They are likely to be available at farmers’ markets, though they may not be in all supermarkets. 

Recipe for Beet Pizza on Whole-Grain English Muffins

Makes 2 servings (4 English muffin pizza halves)

Ingredients:

  • 2 whole-grain English muffins, split into halves (4 halves total)
  • ½ cup of tomato sauce
  • 1 large beetroot, thinly sliced
  • 1 cup fresh spinach leaves
  • ½ cup thinly sliced red onion
  • 1/2 cup crumbled feta or goat cheese (optional, or substitute with low-fat mozzarella)
  • (Optional) basil leaves

Instructions

  1. Spread sauce on the English muffin halves. Sprinkle the cheese on the sauce.
  2. Add the vegetable and herb toppings.
  3. Bake at 400 or toast the pizzas in the toaster oven until the cheese melts.

Nutrition Information per serving: 280 kcal; 10 g total fat; 3.5 g saturated fat; 460 mg sodium; 20 mg cholesterol; 38 g total carbohydrates; 6 g dietary fiber; 8 g sugar; 12 g protein.
